I M BACK

so long i nvr back to blogging ad..
today i m back.. with a complicated dream..
should i work in hotel? open my operation? open my dream cafe?
which line should i go to?
questioning me this few weeks whenever i am free..
wondering is there any1 still waiting for me to post up more recipe..
finished my internship on 11 oct..

am i too free? yes i am..
am i clear with my future? no i m not..
can i concentrate and committed with my job? yes to say. nope to do
i m so blur nw.. looking for someone to guide me..

Fusion? dish? lifestyle..

something comes into my brain so suddenly..
eating tomyam fried rice..
i realize is tat a possibility for me to create a fusion cuisine?
thinking it.. i found it..
100gm of tomyam fried rice served with 160gm vietnamese baked fish..
will it be a fusion cuisine de main course?
or may be some of u can try this out..

a nice dish is simple to do with few combinations
arrangement on the plate.. the way o sauce spilling around..
the 3d view of the dishes.. is all making a dish to be perfect..
a perfect color combination oways attract ppl to try on it..
preferable a few colors of blind taste dish than a dull color of flavorful dish..
human oways make decision frm the first appearance..
tats y nwadays ppl are pay to enjoy the environment of eating
and not pay for wad are they eating..

on the night with the hot air..
nothing more.. jz left out is our strong frenship bond..
laughing loud at boston baru..
talking and refreshing sweet memory..
long time didnt sit with old classmate and chat..
wad we chat wasnt like last..
we talking is jz about memory.. forget the stress.. forget the pressure..

the time passing too fast..
we cant stop the time.. but plz dun let the time to stop us
time might make our memory lesser and lesser.. miight oso our friendship bond..
gathering is meaniingful to strenghten the bond between us..
the laz gathering i might join.. days to work starting soon..

Dim Sum


literally known as "touch heart"
it is a chinese cuisine which involves a wide range of lght dishes served alongside chinese tea
dishes come in small portion and may include: meat, seafood and vegetables as well as desserts and fruit

the main dishes of dim sum:
dumpling.. bau.. rice noodle rolls.. phoenix talons.. steamed meat ball.. spareribs.. lotus leaf rice.. congee.. sou.. egg tart.. mango pudding and etc...

here i m going to guide reader to make a simple egg tart..

ingredients:(pastry)
all purpose flour 250gm
salt1gm
butter diced 140gm
fine sugar 30 gm
egg 1 nos
cold water 30ml

fillings:
water 235ml
fine sugar 150gm
egg 3 nos
milk 100ml
vanilla essence 2ml

method:
  1. preheat oven at 180C
  2. mix flour and salt.. then mix in butter until it resemble a coarse crumbs.. then add in cold water and egg to form a soft dough.
  3. let it rest in a chiller for 30 minutes.
  4. after rest, press it into moulds and let it rest again..
  5. meanwhile, cook the sugar and water to form a water syrup and set aside to cool.
  6. combine eggs, milk and vanilla essence in a bowl.. beat it until smooth and strain into the syrup tat has been cool.
  7. mix the syrup unti it is well combine with the egg mixture.. pour it into the mould gently..
  8. bake for about 20 minutes or the pastry is golden brown and filling is set..
  9. ready to serve with the mould remove away..

today woke up by a bad dream.. lucky is a call tat make me wake up..
i love u.. this call make me clear tat the thing happened jz nw is dream..
having breakfast.. lend mum a hand on her hsework..

sitting here.. drawing some courses.. for some1..
planning some specialty menu and keep for some special event..
writting recipe and method.. but never try tat before..
wad i had promise i will do.. jz plz gimme time to finish it..

1 day 24 hour is nt enuf for me at all... wad i can do is to make up the 48 hr schedule into this 24 hr schedule..
can i? there is a big question mark for me..

today i am going to do on some research on fish and its recipe..
hope it reli works.. 5 hours time for me to decerote a main course and a dessert.. will it done?

Kinda Mood

duno wad happen on me..
a mood.. with bored? or too free?
i think is boredom and freedom was added up..
jz like honey and mustard added up become a perfect sauce for seafood..

today? 3rd of june.. the following day after my final examination in diploma level of culinary art..
wad i doing today?? ntg other than being a language translator for my lovely mum..
i tot going to enjoy my day before my training start... bt seems nt.. i m lack of transportation..

not a poor man and oso not coming frma rich family..
i m different with those ppl who got car and can travel everywhere they wan..
for me? no urgent no travel... even working or studyng.. i will still take the publc transport to reduce my expenses as low as possiblee..
so this is the realistic of the social life..
money bigger.. enjoyment more.. pressure lot.. and so on..

sitting here nw.. typing.. refreshing my memory..
ntg more is in my mind.. study? end... love?? someone with me in relation..
work?? training to go.. family?? a trouble folo with the other trouble..
money?? still owing ppl.. working hard to get back and pay back.

i wonder who will really reading my blog.. ntg special.. other than my fren..
no long term reader.. i think.. coz i may not those long term writter..
or shud said i might dun have too much time to spend in front this pc and typing here...
coz have to work and training.. the life is forcing me to do so..

starting from next monday, i will stepping my leg into the real kitchen
the 5 star hotel.. sunway hotel.. a high pressure working places for me..
7-3 , 3-11, 11-7.. 3 syif.. kitchen syif is different with all the work syif..
i will be very bz tat time?? i think so.. coz all the news from the cooks and chef..
they said.. sunway is a bz hotel among all those hotel...
good or bad news? good for learning more thing.. bad for less rest

my final practical examination is on my personal four course creation..
and i done perfect well with 81% marks.. the second highest mark in the class..
