Dim Sum


literally known as "touch heart"
it is a chinese cuisine which involves a wide range of lght dishes served alongside chinese tea
dishes come in small portion and may include: meat, seafood and vegetables as well as desserts and fruit

the main dishes of dim sum:
dumpling.. bau.. rice noodle rolls.. phoenix talons.. steamed meat ball.. spareribs.. lotus leaf rice.. congee.. sou.. egg tart.. mango pudding and etc...

here i m going to guide reader to make a simple egg tart..

ingredients:(pastry)
all purpose flour 250gm
salt1gm
butter diced 140gm
fine sugar 30 gm
egg 1 nos
cold water 30ml

fillings:
water 235ml
fine sugar 150gm
egg 3 nos
milk 100ml
vanilla essence 2ml

method:
  1. preheat oven at 180C
  2. mix flour and salt.. then mix in butter until it resemble a coarse crumbs.. then add in cold water and egg to form a soft dough.
  3. let it rest in a chiller for 30 minutes.
  4. after rest, press it into moulds and let it rest again..
  5. meanwhile, cook the sugar and water to form a water syrup and set aside to cool.
  6. combine eggs, milk and vanilla essence in a bowl.. beat it until smooth and strain into the syrup tat has been cool.
  7. mix the syrup unti it is well combine with the egg mixture.. pour it into the mould gently..
  8. bake for about 20 minutes or the pastry is golden brown and filling is set..
  9. ready to serve with the mould remove away..
