it is a chinese cuisine which involves a wide range of lght dishes served alongside chinese tea
dishes come in small portion and may include: meat, seafood and vegetables as well as desserts and fruit
the main dishes of dim sum:
dumpling.. bau.. rice noodle rolls.. phoenix talons.. steamed meat ball.. spareribs.. lotus leaf rice.. congee.. sou.. egg tart.. mango pudding and etc...
here i m going to guide reader to make a simple egg tart..
ingredients:(pastry)
all purpose flour 250gm
salt1gm
butter diced 140gm
fine sugar 30 gm
egg 1 nos
cold water 30ml
fillings:
water 235ml
fine sugar 150gm
egg 3 nos
milk 100ml
vanilla essence 2ml
method:
- preheat oven at 180C
- mix flour and salt.. then mix in butter until it resemble a coarse crumbs.. then add in cold water and egg to form a soft dough.
- let it rest in a chiller for 30 minutes.
- after rest, press it into moulds and let it rest again..
- meanwhile, cook the sugar and water to form a water syrup and set aside to cool.
- combine eggs, milk and vanilla essence in a bowl.. beat it until smooth and strain into the syrup tat has been cool.
- mix the syrup unti it is well combine with the egg mixture.. pour it into the mould gently..
- bake for about 20 minutes or the pastry is golden brown and filling is set..
- ready to serve with the mould remove away..
